Perfect Prickly Pear: medicine and superfood

Prickly pear is a cactus that is both a food and a medicine and also touted as a "superfood' by many doctors!

 The fiber and pectin in this cactus lowers blood sugar by decreasing the absorption of sugar in the intestines while the plant extract can improve insulin sensitivity.  

This nutritious cactus contains much more than just fiber... it is rich in antioxidants, minerals, and  linoleic acid, an essential fatty acid for your body.  

You can even take it old-school and make a drink from the cactus just like people in Mexico have been doing for thousands of years.

Prickly Pear Drink Recipe

  • 4 fresh prickly pears

  • 1 cup ice cubes

  • 2 limes, freshly squeezed

  • 1 (1-inch) chunk fresh ginger

  • 1 tablespoon agave nectar

  • 2 tablespoons raspberry syrup

  • 1 cup water, chilled

  • ½ Cup raspberries, placed in the freezer for at least 1 hour
